Two No Fail Campbell's Soup 30 Minute Meals

Mmmmm, Mmmmmm Good!

If your family was anything like mine, Campbell’s Soup was a “staple” in the pantry.  Tomato Soup with a grilled cheese sandwich just could not be beat.  Chicken and Noodle was a close second on my list of favorites.  Campbell’s Soup and the Campbell’s Soup Kids grew up right along side of us.  My Mom even got an obsession and had a Campbell’s Soup Kitchen that could have been a museum.  When my Mom passed, my younger brother inherited the “Lot”,…..and there was A LOT!!

Seems as though most of us relied on these soups to help complete a meal.  My boyfriend did, after we met, he introduced me to two recipes his Mother use to make.and gave to him.  They both are easy 30 minute meals, great for the busy week nights.

The first one is a Chicken Honey Dijon served over white rice. The chicken breast halves can be cooked whole, I like to cube the chicken breasts before cooking starts.

Honey Dijon Chicken and Rice

Minute Rice

3-4 Chicken Breast Halves (whole or cubed)

2 tbsp. Canola Oil

*1 can Campbell’s Soup Cream of Chicken With Herbs Soup

3 tbsp. Honey

2 tbsp Dijon Mustard

Water (to thin soup)

Cube chicken breast halves or keep whole if desired.  Season with salt and pepper.  In a medium skillet, brown chicken on all sides in oil.  While chicken is browning, in a small bowl combine soup, honey and dijon mustard.  Honey and mustard can be adjusted according to preference.  Thin soup slightly with water.  Sauce will also thin during cooking.  Pour soup mixture over chicken, cover and cook over medium/medium low heat for 30 minutes or until chicken in no longer pink in the middle.

Cook rice according to package directions while Chicken Dijon is simmering.  Spoon Chicken mixture over rice and serve.  Makes 3-4 Servings

Campbell’s Tomato Soup Pork Chops With Wild Rice

1 package Uncle Ben’s Original Wild Rice

4 Pork Chops (boneless or bone-in)

1 can Campbell’s Tomato Soup

McCormick’s Montreal Seasoning

Salt and Pepper to taste

2 Tbsp. Canola Oil

 Cook wild rice according to package.  Season pork chops with Montreal to taste. Brown pork chops on both sides.  While chops are browning, combine Tomato Soup and thin with water.  Add salt and pepper, stir with whisk.  Pour mixture over pork chops, cover and simmer for 30 minutes turning once.  Watch tomato mixture so it does not get too thin.  Remove cover if necessary.

Serve with rice.  White rice can also be used of preferred.  The Uncle Ben’s Original Wild Rice brings the meal together nicely.

Makes 4 servings.
