Recipe “Hacks” and Better Homes And Gardens in the same title??
“Back in the Day” as they say, we lived in Nashville, TN and my three sons were Kindergarten age and below. Their Father and I, a few years prior, made the decision for me to stay at home with the boys. Well, actually I kind of made that decision on my own! Let’s just say, money WAS an issue. Furthermore, with 3 little boys running around the house, popping out to retrieve a missing item for my recipe, was not always in the cards!
I have always enjoyed cooking and baking. One day, I chose to splurge a bit and order the “New CookBook” published by BETTER HOMES AND GARDENS. My particular copy was printed in 1996. I still have this coveted cookbook. My boys will attest to the fact, it has been well used. To this day, I continue to get my monies worth!
So, I can only guess the contributing writers of this book did not intend to be submitting “Hacks” Up until the last five or six months, the word “Hack” (to me) was NOT a good thing. I have since found out that a “Hack” can actually be quite helpful. According the Urban Dictionary.com, a “hack” is defined as “a clever solution to a tricky problem” or “to hack is to mod or change something in an extraordinary way”. However, one of the most used sections in my copy is called, “Emergency Substitutions”.
11 Recipe “Hacks” from Better Homes And Gardens, New Cookbook. Revisited.
- 1 cup granulated sugar = 1 cup packed brown sugar or 2 cups sifted powdered sugar
- 1 cup honey = 1 1/4 cups granulated sugar plus 1/4 cup of liquid
- 1 cup buttermilk = 1 tbsp. lemon juice or vinegar, plus enough whole milk to equal 1 cup. Let stand for 5 minutes.
- 1 cup whole milk = 1/2 cup evaporated milk plus 1/2 cup of water.
- 1 tsp. baking powder = 1/2 tsp. baking soda plus 1/2 whole milk (to replace liquid called for.
- 2 cups tomato sauce = 3/4 cup tomato paste plus 1 cup water.
- 1 cup tomato juice = 1/2 cup tomato sauce plus 1/2 cup water
- 1 clove garlic = 1/8 tsp. garlic powder or mixed dry garlic
- 1 small onion = 1 tablespoon onion powder or 1 tablespoon minced onion
- 1 tsp. dry mustard = 1 tablespoon prepared mustard
- 1 cup corn syrup = 1 cup granulated sugar plus 1/4 cup liquid
While revisiting and sharing these emergency substitutions, I had to chuckle.
I am sure there are some of you reading the above “Hacks” thinking they seem a bit out of date. But, hey, when you are in a pinch, you do what you have to do. I have used each one of these suggestions at least once since my book arrived in the mail. While it would be much easier to pop online and find something quick, I continue to enjoy pulling out my cherished book!
