If your family was anything like mine, A can or two of Campbell’s Soup could be found in pantry. Tomato Soup with a grilled cheese sandwich, to this day is a hit with kids of any age. Chicken and Noodle topped my list of must haves.
Campbell’s Soups are an awesome lunch just the way they are, served with nothing else.
For many years, Moms have been using a variety of the soups to have dinner ready to go in about 30 minutes. Some of them work because of the consistency. Perfect for gravy or a sauce to be served with the meal. Others work well being incorporated in the dish to tie the flavors together.
Our friends at Campbell’s don’t just make soup anymore.
I can’t recall exactly when, however, at some point in her life, my mother became and avid collector of Campbell’s Soup items. Eventually, her collecting became an obsession and Campbell’s collectibles took over her kitchen.
After I met my significant other, he introduced me to two Campbell’s recipes his Mother made regularly. Both are easy 30 minute meals, great for the busy week nights.
One of the quick and easy uses Campbell’s Creamy Chicken With Herbs. Use this soup to create their Chicken Honey Dijon served over white rice.
Her other “go to” week night meal was Tomato Sauce Pork Chops & Wild Rice. I can’t say we prefer one over the other. Both are excellent 30 minute meals for busy families. If you choose to try them, use the comment section to let us know what you think.

30 Minute Weeknight Meals by Campbells
“Honey Dijon Chicken and Rice Minute Rice”
3-4 Chicken Breast Halves (whole or cubed)
2 tbsp. Canola Oil
*1 can Campbell’s Soup Cream of Chicken With Herbs Soup
3 tbsp. Honey
2 tbsp Dijon Mustard
Water (to thin soup)
Cube chicken breast halves or keep whole if desired. Season with salt and pepper.
In a medium skillet, brown chicken on all sides in oil. While chicken is browning, combine soup, honey and dijon mustard in small mixing bowl.
Honey and mustard can be adjusted according to preference. Thin soup slightly with water. Sauce will also thin during cooking.
Pour soup mixture over chicken, cover and cook over medium/medium low heat for 30 minutes or until chicken in no longer pink in the middle.
Cook rice according to package directions while Chicken Dijon is simmering.
Spoon Chicken mixture over rice and serve.
Makes 3-4 Servings
“Campbell’s Tomato Soup Pork Chops With Wild Rice”
1 package Uncle Ben’s Original Wild Rice
4 Pork Chops (boneless or bone-in)
1 can Campbell’s Tomato Soup
McCormick’s Montreal Seasoning
Salt and Pepper to taste
2 Tbsp. Canola Oil
Cook wild rice according to package. Season pork chops with Montreal to taste. Brown pork chops on both sides. While chops are browning, combine Tomato Soup and thin with water. Add salt and pepper, stir with whisk. Pour mixture over pork chops, cover and simmer for 30 minutes turning once. Watch tomato mixture so it does not get too thin. Remove cover if necessary.
Serve with rice. White rice can also be used of preferred. The Uncle Ben’s Original Wild Rice brings the meal together nicely.
Makes 4 servings.
